It is safe to drive with only one eye.
And there’s no article that ban persons with only one eye to drive if they meet the minimum standard at the eyes tests procedural.
But you may be asked to take an eye test to prove that sight remaining is sufficient.
Having only one eye means that you’ll loose depth perception and some peripheral vision, and you’ll have to be more careful when driving, but that doesn't make it dangerous.
